Instructions

To Make the Crust:

  • In a medium mixing bowl, whisk together flour, brown sugar, baking soda, baking powder, and salt until well combined.
  • Gradually add the melted butter to the dry ingredients and mix thoroughly until a cohesive dough forms. The mixture should be crumbly yet hold together when pressed.
  • Divide the dough equally among the cups of your mini cheesecake pan. Press the dough firmly and evenly into the bottoms of each cup to form the crust. Set the pan aside.

To Make the Filling:

  • In a large mixing bowl of a stand mixer (or using a hand mixer), combine the softened cream cheese, granulated sugar, all-purpose flour, large eggs, and vanilla extract. Beat on medium speed until all ingredients are thoroughly combined and the mixture is smooth and creamy, scraping down the sides of the bowl as needed. Be careful not to overmix.
  • Carefully pour the cheesecake filling evenly over the prepared shortbread crusts in each cup of the pan.
  • Bake the mini cheesecakes in a preheated oven for approximately 15 minutes, or until the edges are set and the centers have a slight jiggle. To Make the Mousse:

  • Prepare a double boiler by placing a heatproof bowl over a saucepan with simmering water (ensure the bowl doesn’t touch the water). Add the chocolate and water to the bowl. Stir occasionally until the chocolate is completely melted and the mixture is smooth.
  • Transfer the melted chocolate mixture to a large mixing bowl of a stand mixer fitted with a whisk attachment. Whip the chocolate on high speed for 4 to 5 minutes until it starts to lighten in color and thicken. In the meantime, fill a very large pot or another mixing bowl with cold water and ice (about ¼ full) to create an ice bath.
  • Turn off the mixer and carefully remove the mixing bowl. Place the bowl directly into the cold water bath, ensuring no water splashes into the chocolate.
  • Allow the chocolate to sit in the ice bath for approximately 5 minutes, stirring gently once or twice, to cool it down sufficiently.
  • Remove the mixing bowl from the ice bath and return it to the stand mixer base. Whip the chocolate mousse again on high speed until it becomes much lighter in color, thick, and stiff, resembling a rich frosting. Slowly add the vanilla extract while continuing to whip until fully incorporated.
  • Chill the chocolate mousse thoroughly for at least 2 hours in the refrigerator. During this time, it will harden and firm up significantly. To achieve a perfectly spreadable or pipeable consistency, transfer the chilled mousse back to the mixer bowl and whip again, gradually adding the optional milk until it reaches your desired texture.
  • Once the mini cheesecakes are completely cool and the mousse is ready, decorate each cheesecake with a generous dollop or swirl of chocolate mousse. Top with chopped hazelnuts or your preferred fresh fruit for a beautiful presentation.
