This month has truly flown by! It feels like just yesterday we were cooling down with refreshing granitas, and now, almost in the blink of an eye, Halloween decorations are beginning to pop up, pumpkins are adorning every storefront and farmers market stand, and the trees are slowly but surely transitioning into their stunning autumn palette. The mornings have a delightful chill that hints at the cozy comforts of fall baking and warm beverages to come. This time of year always inspires a shift in the kitchen, moving towards richer, more comforting flavors and often, more intricate techniques. It’s the perfect season to explore new culinary skills and ingredients.
As the days grow shorter and the air becomes crisper, there’s a natural inclination to seek out warmth and comfort, not just in our clothing but in our food. - 4 egg yolks
- ¾ cup granulated sugar
- 3 limes (zested and juiced, about ¾ cup juice)
- 6 tablespoons salted butter
Instructions
- Prepare a double boiler by filling a medium saucepan with 1 inch of water. Place over medium heat until simmering.
- In a large, heatproof mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is smooth and pale.
- Add the freshly squeezed lime juice to the egg and sugar mixture, whisking well to combine.
