Instructions

  • Ensure the stainless steel insert is properly placed in your Instant Pot. Add the chicken strips to the insert. Pour the prepared oil and seasoning mixture over the chicken, gently tossing with metal tongs until the chicken is evenly coated.
  • Wash, core, and thinly slice your bell peppers and onion. Layer these vegetables on top of the seasoned chicken in the Instant Pot.
  • Add ½ cup of water to the insert. For less “soupy” fajitas, consider adding the water to the bottom of the pot and placing the chicken and veggies on a trivet above the water.
  • Secure the lid on your Instant Pot and ensure the steam release valve is set to the “sealing” position. Press the “Manual” or “Pressure Cook” button, confirm it’s on high pressure, and set the timer to 10 minutes. The Instant Pot will beep after a few seconds, indicating it’s building pressure.
  • Once the Instant Pot reaches full pressure, the display will show the countdown timer, signaling that the cooking process has officially begun.
  • When the cooking cycle is complete, the Instant Pot will beep. Press the “Cancel/Off” button to stop the cooking process. Carefully switch the steam release valve to the “venting” position to perform a quick pressure release. Once the float valve (metal pin) drops down, indicating all pressure has been released, carefully open the lid, always tilting it away from your face to avoid any residual steam.
  • Serve the tender chicken and perfectly cooked peppers in warm flour tortillas. Garnish generously with chopped cilantro (or parsley for a milder flavor) and a dash of crushed red pepper flakes for a little heat, if desired.

Notes

This recipe requires ½ cup of water, as it is the manufacturer’s recommended and often required minimum liquid amount for your Instant Pot to come to pressure safely. If you prefer a less “soupy” final texture, you can add the water to the bottom of the pot and set the chicken and veggies on a trivet. Alternatively, after cooking, you can remove the chicken and peppers, spread them on a baking sheet, and broil for a few minutes to achieve a slight char and evaporate excess liquid, similar to preparing carnitas.

You can easily substitute chicken thighs for chicken breast if preferred. For convenience and lower sodium, I recommend buying thinly sliced chicken breast and cutting it into strips.

For meal prep, you can combine the oil and seasoning mixture with the sliced chicken in a Ziploc bag and freeze it for later, or store it in the fridge for up to 2 days before cooking.

Feel free to use a store-bought fajita or taco seasoning packet if you want to skip making the seasoning blend from scratch.
